- Prepare 1 pound of carrots chopped.
- Prepare 2 of large chopped shallots.
- Prepare 2 of garlic cloves chopped.
- You need 1 T of curry powder.
- You need 1/2 t of salt.
- It's 1/4 t of black pepper.
- It's 2.5 c of veg stock.
- Prepare 2 T of almond butter.
- It's 1 of lime juice and zest.
Carrot creamy no-cream curried soup instructions
- Heat oil in medium saucepan..

- Add veg stock, bring to boil..
- Reduce heat, simmer 5-7 minutes till carrots tender..
- Add almond butter and lime juice..
- Puree with wand mixer and garnish with zest.
