  1. You need 2 1/4 cup of All purpose flour.
  2. You need 2 tsp of Baking powder.
  3. You need 1/2 tsp of Salt.
  4. Prepare 2/3 cup of Brown sugar.
  5. It's 6 tbsp of Butter, melted and cooled.
  6. Prepare 1/2 cup of Peanut butter.
  7. It's 2 large of Eggs.
  8. Prepare 1 cup of Milk.
  9. You need 3/4 cup of Chocolate chips.

  1. Preheat oven to 375°. Line a muffin pan with 12 paper liners..
  2. In a medium bowl, whisk together the flour, baking powder, salt, and brown sugar. Set aside..
  3. In a large bowl, whisk together the melted butter, peanut butter, eggs, and milk until smooth..
  4. Add In the flour mixture and stir until just combined..
  5. Stir in chocolate chips..
  6. Divide batter evenly between prepared muffin tins, filling each to the top..
  7. Bake for 17-20 minutes..
  8. Allow to cool for 5 minutes in the pan, then remove to a wire rack to cool completely..

The balance of flavours is just right, they're not too heavy and very moreish. These Vegan Peanut Butter Muffins are amazing! They are super easy to make and take very little time to mix together as you need only one bowl and a spatula (no mixer, no whisk, no creaming or folding).
